Harry Clearwater’s Fish Fry

3 1/2 cups cornmeal
1/2 cup flour
2 1/2 tablespoons paprika

2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container.

T o use; Soak 2 lbs of fish of your choice in 2 cups buttermilk. Remove the fish from the buttermilk, removing any excess. Dredge each fish in the cornmeal mixture, coating each side completely. Lay the fish in the hot oil and fry until golden brown, about 7 minutes. Remove from the oil and drain on a paper-lined plate.

Now all i have to do is hunt down some cornmeal. Is that a yellow thing like polenta or a white thing like flour? I'm wondering if it's the same as our maize flour here. (we have something here called cornflour, but that is actually made from wheat - not corn)

Cornmeal is the same as maize flour, basically. It's just the degree to which it is ground. We call it course or fine ground cornmeal. Your maize meal or maize flour is our what most people refer to as cornmeal in America with polenta or polenta flour as what we refer to as coarsely ground cornmeal. Though it is not to be confused with cornflour because we call that cornstarch.
